In Pollina, in the heart of the Madonie natural park, is La Manna di Zabbra, restaurant and farm holiday estate. Before sitting down to eat, there will be an opportunity to taste Manna, the sweet crystallized sap of the ash tree which was used in the preparation of sweets in times gone by and which today is harvested only here.
Dinner will consist of traditional dishes from the Madonie area; ancient perfumes and flavors will be combined with unusual spices and traditional ingredients. Overnight in the nearby town of Castelbuono, set in a valley at the foot of the Madonie, already inhabited in Neolithic times, and showing evidence of its Greek, Roman, Arab and Byzantine settlers.
Stay in the magnificent Relais Santa Anastasia, converted from a medieval Benedictine abbey which was founded in 1100 by a Norman mercenary.
